My Chicken & Dumplins!
 

 I use only chicken breast cooked in the crock-pot until tender and tear to bite-sized pieces.
Add celery bits, carrots etc. to crock pot, if desired.
 




Put on a pot of water (w/dash of salt) to boil...just enough to cook the dropped dumplins.

then blend in a good sized bowl...
2 cups flour
1/2 teas baking powder (mash the chunks out first)
salt
stirring and sifting it all around until blended well. (use sifter if you have one).

 



In a separate bowl, mix...
1/2 cup of milk
1/2 chicken stock or broth (stock seems more robust to me)
1 egg and beat by hand.
 

 

Pour the liquid mix into the big bowl with the your dry mixture and mix well with wooden spoon (works best) until you a get nice glob of dough.





Start dropping 1/2 teas sized spoonfuls into the boiling pot of water.
Add pepper and salt and sprinkle in parsley flakes (optional) into pot and stir.
Lower heat setting and Cook for 10 minutes with a lid.
 

Afterwards, your water level should be much lower after the dumplins cook up. (if not, pour or use a cup to lower the water to about 1/3 of the pot)

 
 Then add chicken broth or stock to the pot...
and add the chicken.

For a thicker broth...
Mix flour and water in a cup...fill the cup to about 3/4 and the rest water (1/4) add either flour or water amounts consistent to a thick paste.

Pour in partial amounts of the paste slowly and stir constantly until the desired thickness is reached. Discard unused paste.
 







Replace lid and simmer for about an hour (30 min if your real hungry)...but the longer the better and best warmed up the next day!! Great comfort food!
